Mrs. Stanley’s Potato Casserole by Shelley Shepard Gray

“When we first
moved to Ohio, we were blessed to live on a street with very welcoming
neighbors. Before we knew it, we were joining our new friends for pot luck
dinner parties! I usually baked a cake, but all of us always hoped Mrs. Stanley
would make her potato dish. When she moved away, she graciously shared her
recipe, and now it’s my children’s most requested dish when they are about to
come home from college. I think it actually had a different name at one
time…but in our house, it’s called Mrs. Stanley’s Potatoes. It brings back
memories of lots of fun and laughter…and a great many wonderful dinners shared
with family and friends!” 

Ingredients:

1 32oz thawed package of frozen hash browns

1 can of cream of mushroom soup

½ cup of chopped onion

1 16 oz carton of sour cream

4 T of margarine or butter

1t. salt
½ t. pepper

2 cups of grated cheddar cheese

Topping Ingredients:

2 cups crushed Corn Flakes

4 T margarine-melted

To prepare:

Mix all ingredients in large bowl. Spread into greased 9x13 pan.
Combine the corn flakes and melted margarine, spread on top of potato
mixture.
Bake at 350 degrees for 45-60 minutes.

Mama’s Flat Apple Christmas Pie by Kathi Macias

“I actually have a very favorite
recipe that I always make at Christmastime.
It was my "Mama's Flat Apple
Pie" (with a ‘Christmas twist’), a sort of mix
between apple pie and apple strudel.
And there's nothing better than the
smell of apples and cinnamon and
spice filling the house when friends drop
by for a holiday visit.”

Ingredients:

3 Cups all-purpose flour

1-1/3 Cups shortening

1/2 Teaspoon salt

2 Medium eggs, separated

2/3 Cup milk

3 Handfuls flake-type cereal (i.e.,
corn flakes)

8-10 Granny Smith apples

1 Cup granulated sugar

1 Tablespoon cinnamon

1 Teaspoon nutmeg

1 Tablespoon orange juice

1 Teaspoon lemon juice

1 Tablespoon margarine or butter

To prepare: 

Preheat oven to 350 degrees. Blend together flour, shortening and
salt. Add egg yolks to milk and mix with fork. Add yolk mixture to flour
mixture. Divide the dough and roll out half of it for the bottom crust to fit a
cookie sheet. Sprinkle the bottom crust with cereal. Peel and thinly slice
apples and spread evenly over the bottom crust. Sprinkle mixture with sugar,
cinnamon, and nutmeg. Pour juices over apples and dot with margarine. Roll out
the top crust and place over the apples, sealing the edges. Cut small slits in
the top crust. Beat the egg whites until stiff and spread over top crust.
Bake for approximately 45 minutes
until golden brown
Serve warm, topped with peppermint ice cream.

Ann’s Simple Hot Apple Cider by Ann H. Gabhart

“One of my favorite things at Christmas is hot, spiced apple
cider. The Shakers surely enjoyed cider at Christmas time too since they
harvested and preserved so many apples. “

Ingredients:

1 Gallon apple cider

1 Peeled orange

15 Whole cloves

4 Cinnamon Sticks

To Prepare:

Pour apple cider into a slow cooker. Add a peeled orange
with whole cloves pushed into it and sticks cinnamon. Heat and enjoy.

Karen’s Famous Cheeseball by Beth Wiseman

“Family traditions are such a huge part
of the holidays, and my family wouldn’t think it was Christmas without certain
cheese balls that I’ve made for as long as I can remember.Every year, I pull out a yellowed piece of
paper that is barely intact.I should
rewrite the recipe, but a special friend in high school wrote it down for me,
and I like seeing her handwriting and remembering the great times we had.”

Ingredients:

2 ½ pkgs. (8 oz each) cream cheese

1 cup grated cheddar cheese

4 oz blue cheese

1 small grated onion

Salt and pepper to taste

Topping Ingredients:

Paprika

Chopped pecans

Parsley

To prepare:

Mix together the top five ingredients and
roll into three balls. On a plate, mix
paprika, chopped pecans, and parsley. Roll each cheese ball until covered.

Tip: It is best to have laid out three pieces of plastic wrap first. Place each ball on the Saran wrap, enclose,
and refrigerator. These freeze well
also.
